Morlet's 2011 Cabernet Sauvignon Coeur de Vallée also has good depth. Grilled herbs, mint, tobacco and dark red fruit flow effortlessly from the glass. Today, the Coeur de Vallée shows some slightly angular contours that are a bit out of character. It will be interesting to see how the Coeur de Vallée develops over the next year. The 2011 is a departure from previous vintages, as the Cabernet Sauvignon is only 55% of the blend, while Cabernet Franc is 45%, because of the poor Cabernet yields in this part of To Kalon.
